Recipe: Christmas Energy Balls

Christmas Energy BallsChristmas is a time for over-indulgence – and so it should be! But if you fancy having some healthier festive snacks to hand, then knock up these energy balls with a Christmas Pudding twist.

They’re super quick to make and can be kept in an airtight container in the fridge for a few days or the freezer for longer, just let them defrost for 15 – 20 minutes before you tuck in.

Ingredients

1 cup Medjool dates

3/4 cup almonds

3/4 cup pecans (or walnuts)

1/4 cup raisins

1 tbsp coconut oil

1 tbsp lemon rind

1 tbsp orange rind

1 tsp ginger

1 tsp nutmeg

1 tsp cinnamon

Method (makes 16)

Put all the ingredients in a food processor and whizz until they form a sticky mixture.

Using your hands, mould the mixture into bitesize balls.

Eat and enjoy!
